Balsamic lamb with asparagus salad Hi all,
I was searching for inspiration the other day as i was feeling a tad bit fancy and I found this dish on the delightful www.taste.com.au website. Which is utterly brilliant. IF you havent checked it out I thoroughly suggest tha tyou do. I adore it.
ANyway i made this and its easy and reletively quick to cook not to mention dead set tasty.

Ingredients (serves 1)
200g lamb loin (see note)
1 lemon
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 bunch asparagus, trimmed, cut into thirds
30g snow pea sprouts, trimmed
Method
Preheat oven to 200°C. Place lamb into a greased ovenproof dish. Cut lemon into slices and arrange over lamb. Drizzle with half the oil and vinegar. Season with salt and pepper. Roast for 15 minutes.
Toss asparagus in remaining oil. Season with salt and pepper. Remove lamb from oven. Add asparagus to ovenproof dish. Roast lamb and asparagus a further 10 minutes or until lamb is cooked to your liking. Cover lamb with foil. Allow to rest for 5 minutes before slicing.
Toss asparagus and sprouts together. Serve with lamb.
Notes & tips
Note: You could also use lamb backstraps or lamb fillet. I also roasted tomatoes in the oven and used spinich instead of snow pea sprouts.
