Broccoli and Cauliflower Ive got 2kgs of broccoli and cauliflower in my freezer that needs eaten. Does anyone have any interesting and relatively simple recipes for either/both of these vegetables?

How about soup?
You just cook it up with some, onion, stock and seasoning.
I usually do enough for 4 lots of lunch vegetables have one that day and freeze the rest.
You can throw some cheese into it or beans to give you protein as you serve it.
Also I puree the cauliflower and it makes something very similar to mashed potato.
Someone also had a good recipe for cauliflower cheese and you can use a mix of brocolli and cauliflower for that too.

broccoli cauli and cheese bake with slivered almonds is yummi
leek and cauli soup is great too
chicken curry with steam cauli and broccoli is loverly....

Frozen stuff will need to be well cooked, use them to make vege omelletes/frittatas, with lots of spices, chilli and garlic.

Here is the recipe in more detail.
4 times your weight of lunch veges including the onion.
Chop onion and brocolli and cauliflower if it is whole.
In a large saucepan heat 1 tablespoon oil and add chopped onion. Cook gently until onion becomes more transparent. Add in the brocolli and cauliflower and at least 4 cups of stock. Can add up to 6 but this makes soup very runny.(You can get packs of vegetable stock from the supermarket or use a powdered type like vegeta. 1teaspoon powder to 1 cup water.)
Bring to boil, then turn stove down until liquid is simmering (not boiling furiously) I add 1/2 - 1 teaspoon mixed herbs. Dry or fresh. 1/2 tsp pepper and salt.
Once the vegetables are cooked. (soft when you poke them with a knife) Take off the heat and allow to cool a little.
I have a whizz stick and use that straight in the pan to blend the soup. (Just watch the liquid doesn't spray everywhere :lol:) or use a blender, food processer, even a potato masher will do - you just get a different texture depending on what you use.
Have a taste and add more s & p if you need to.
A variation could be to add a little bit of chilli powder. 1/4 - 1/2 tsp.

I do the same soup as jb but using only cauliflower and i add a teaspoon of curry and i use chicken stock powder.
I also do sauteed broccoli which the whle family love, cook broccoli lightly but not until it's falling apart, steam, boil or microwave.
In a little olive oil gently cook 2 cloves of crushed garlic, then toss in the drained broccoli and mix the oil & garlic through. Salt to taste.

This is a recipe from the cookbook that I love.
Cauliflower
cream cheese
spring onion
touch of curry powder
pepper
mountain bread
Steam the cauliflower.
Mix with cream cheese, spring onion and spices.
Put in the middle of mountain bread and fold in sides to make a neat parcel.
Toast in a panini maker or cafe style flat grill (George Forman type grill works too)

I'm with foodie on this one. The recipe from the book is Curried Cauliflower Strudel. This time I made it I used a mix of cauli and broccoli. Have made it with broccoli only ( best result), cauli only (bit tasteless by comparison) and fresh asparagus (not too bad).
This last time I made it I made up the whole recipe, cooked in the oven and put the remainder portions into the freezer for work lunches etc. Will be a surprise the day I pull out the first one to see if it does actually freeze OK.

I found it hard to answer this poll I enjoy broccolli but on SS I am not allowed it. am allowed cauliflower not so keen on it. Mary

I'm not allowed brocoli (my fave veggie!). Still don't understand why since I'm allowed cauli. Has anyone had an explanation?
