Curried cauliflower, onion and apple puree...
Apparently this has a texture similar to mashed spuds...I'm trying it tonight: 1 head cauliflower (about 1 pound), trimmed, cut into 1-inch florets, stems peeled and cut into 1/2-inch-thick slices 1 Gala apple, peeled, cored and roughly chopped 1 medium onion, peeled and roughly chopped 1 1/2 teaspoons Madras curry powder Salt and freshly ground pepper 1/4 cup non-fat yogurt (optional) Directions 1. Warm your spray oil in a medium saucepan over medium heat. Add the cauliflower, apple, onion and curry powder and cook for 6 to 8 minutes. Add 1 cup water, cover and cook until tender, 12 to 15 minutes. 2. Put the cauliflower, apple and onion into a food processor or blender and purée until smooth, taking care not to overwork the mixture. If desired, stir in the yogurt and season with salt and pepper.

It was alright. I think I would prefer it without the apple. Would have it again for sure.

This is a little off topic, but I wondered if this would work... If I made chicken curry, or even this curry, do you think I could add pureed cauli to the mix (instead of chunks). I thought this might give the curry a more thicker, possibly creamier texture. I asked my mum and she looked at me like I was nuts! What do you guys think?

I agree that SS curry is a little watery so i think you might be onto something there, if you don't put a lot of water in the curry then add the puree at the end sounds interesting, let us know how it goes. Cheers Mez

It would for sure. I chuck mashed cauli in almost everything at the mo, particularly curries. just use less water too and drain the cauli really well...
