Your allowance of scallops x 2
1 shallot
your allowance of red capsicum minus the shallot x 2
4 cloves garlic
about 40 mils of stock
1half tab tamari
1 teas wine vinegar
1 tab chopped fred cotiander as garnish
Cut the capsicum in chunks. chop the garlic. cut the shallot in 2.5cm pieces.
Heat some oil and add half the garlic cloves. Stir fry till slightly brown. Remove and reserve.
Add the scallops and fry for about 2 mins. Remove from the pan.
Add oil to pan when hot add the remaining garlic and shallot. Stir fry for 10 sec and add the capsicum. Stir fry for one minute. Add the stock tamari and vinegar and the scallops and the reserved garlic to the pan. Turn down the heat and simmer for 5 mins.
Garnish with the chopped coriander.
This should be thickened with 3/4 teas cornflour. I have looked up the amount of carbohydrates in one biscuit I am allowed to have 3 of and I find it is the same as 1 teas of flour so I only have 2 biscuits of lunch and thicken my meal at night.
