Hi Beewee....i am hoping Joan does not mind... i copied her recipe from my post Ali :wink: Choose up to 4 days portions of fruit, with apple as your core ingredient. You can substitute one or more apples with one or more portions of peach, berries, nectarine etc. (remembering that for some fruit, like apricots, a "portion" may be 2-3 fruits) amongst your overall fruit. We have also sometimes done it without apple when I have a surfeit of fruit which is about to go off. Of course you may not choose to use your whole fruit allocation -- say if yours is 3 pieces, for example, you may want to keep one portion for after dinner. Slice the fruit thinly. If you have a food processor, this takes moments using a slicing blade. If adding things like blueberries I will also put them through the slicing blade as your get more berry for your buck. distribute the fruit across the bottom of a deep-ish baking dish, patting down to make a level mix. You can either season it then, with cinnamon, allspice, nutmeg etc or if you prefer (which we do) add those to the crumble topping. We will include goji berries in the fruit mix (that new superfood which is meant to give you superman pants inthe morning). Into the processor (dont bother cleaning it out, it absorbs the fruit stuff you've just sliced) add your entire day's seed allowance for as many days' worth of fruit as you've just sliced up. This means your sunflower, pumpkin, sesame AND linseed. I regularly do four portions, so do four days of seeds. If you are prepared to be a bit wicked, add a generous ~3 tbs of nuts, like ground almonds, pistachios, walnuts etc. This is wholly optional because it makes it not strictly compliant but does wonders for the taste. Also add 3 heaped tablespoons of Splenda, plus the spices if you are adding these to the topping rather than the fruit. I also sometimes add vanilla extract or almond extract or even ginger exract depending on the fruit mix. Grind in the blender until the mix is finely chopped. Distribute evenly over the fruit. Cook the crumble in a 150 centigrade oven for about an hour, then leave to rest overnight in the oven or fridge depending on the weather. In the morning, spoon out a portion, cover and zap in the microwave or cover and heat in oven. Top with your 0% fat greek yoghurt. If you are blessed enough to be able to get Joseph's sugar free maple syrup, it makes a heavenly topping... Cover and refrigerate the remainder. Enjoy! It is fabulous, i have made this many times.....the most popular recipe so far :P
