Pan-fried scallops with avocado & garlic dressing
1 tbs olive oil 8 large scallops 1 ripe avocado, halved stoned removed, peeled each half cut in half baby rocket leaves to serve Garlic dressing 1 garlic bulb 2tbs white wine vinegar 2 tbls extra virgin olive oil salt and freshly ground black pepper Method To make the garlic dressing. preheat the oven to 180 C. Place garlic on a baking tray and roast in preheated oven for 25 mins or until soft. Set aside for 10 mins to cool. Combine vinegar and oil in a screw top jar. Squeeze garlic flesh from cloves into the jar. Season with salt and pepper and shake until combined. Heat oil in a small frying pan over high heat. Add scallops and cook for 1 minute each side or until almost cooked through. Add the dressing and toss to coat. Remove from heat. Divide avocado and rocket among serving bowls. Top with scallops and drizzle with the dressing. Serve immediately. This is the recipe. Make of it what you will according to the portions you are allowed. I know scallops seem expensive but Woolworths recently had them for $16.00 per kg which considering no bone and no fat they are cheaper than meat. I bought two only one kg bags of them frozen. When you measure out from frozen, I think you short change yourself as when they were defrosted the dish was full of water. So probably better to buy them defrosted, probably get more for your money. I grow rocket so not expensive.
