roasted vegie lasagne this was devine back when i was allowed sweet potato but its still kinda nice and feels a bit naughty
veg allowance made up of
mushrooms
zuchini
eggplant
tomato
onion
garlic
cheese allowance of
mozzarella or edam
starch allwance of Mountain bread
method:
chop the vegies into bits so they are the same size except leave the mushies a bit bigger leave the tomato and onions for now
roast the vegies till cooked
meawhile dice the tomato and onion then whack it into the microwave with some herbs ( i just used dried mixed italian ones) for 2 mins ( i have a 1000 watt microwave) then stir and decide if it needs a bit longer ( doesnt in a 1000 watt microwave tho)
now when the vegies are cooked you can do this a few ways, you can chuck the tomato sauce in with the vegies then lay half a mt bread peice down plop the vegie mix on top or you can not put the tomatoe sauce in the vegies and when you put the second mt bread ontop of the vegies put the sauce them followed by the cheese which u have grated.. you can also put a little of the cheese in with the vegies
i cook it for a few mins till the cheese is all melted and yummy, sometimes i chuck my slivered almonds on top before cooking too
serve with SALAD
