Spiced apple and rhubarb crumble
another fantastic recipe from another site (thought you all might be interested) Spiced Apple & Rhubarb Pots with Almond Crumble Serves 2 Ingredients Apiced Apple & Rhubarb Mix 2 apples, peeled and diced 2 stalks rhubarb, cubed 1 tsp artificial sweetener Splash of water 1/4 tsp allspice 1/4 tsp cinnamon 1/4 tsp nutmeg Crumble Almond allowance (seed alternative) Pumpkin Seed allowance pinch sesame seeds 1/2 tsp artificial sweetener 1 tsp tahini paste 1/4 tsp allspice 1/4 tsp cinnamon Method Place all ingredients in Apple and Rhubarb mix into pot. Simmer on stovetop until rhubarb has broken down and mixture is mushy. Divide apple & Rhubarb mix into 2 ramekin dishes. To make crumble, grind almonds and pumpkin seeds (until most are ground but there are still some larger bits). Add sesame seeds, sweetener, allsoice and cinnamon. Stir to combine. Add tahini paste and mix until well distributed but so crumble has some lumpy bits. Spread crumble on top of apple & rhubarb mix. Bake in 150C oven until crumble a bit crispy.

Nazza - we make something similar in double quantities (for BP and myself x 2 days), cook in a slow oven for about an hour, then refrigerate. So we end up with 4 portions - its our mainstay in the mornings, portioned out, warmed up in the oven or microwave and served with 0% greek yoghurt and Joseph's no sugar maple syrup...keeps things simple when time is short. As we both like Rhubarb, will try your variant, it sounds delish. The recipe I use is somewhere in my thread. I was posting here but the recipe list just got too long.... J
