SS cheesecake a scrummy treat.
175g plain yoghurt
splenda or any other sweetener.
100g strawberries ( or any other soft fruit)
2 tbsp of flax
1 tbsp of pumpkin seeds
2 tsp of sunflower seeds
2 tsp of tahini
whip up the yoghurt and a few tsp of splenda to taste and refrigerate.
heat up the strawberries with 1 tsp of splenda and set aside.
blitz all the seeds, tahini and 2 tsp of splenda and squash down in the bottom of a tin, compacting it down to make the biscuit base.
put the swetened yoghurt on top of the seed layer and put the fuit mixture on top of the yoghurt layer once it has cooled. refrigarate overnight.

This recipe is absolutely gorgeous!!! I toast the seeds (although I know some consultants say not too - I'm not dead yet :D) & put some vanilla extract in with them whilst they are toasting. OMG, what a wonderful way to start the day.

How about straining the yoghurt through a chux cloth to thicken it and then make this cheesecake. I make a cream cheese like this.
To make cream cheese:
*add salt to 1kg of yoghurt
*line a sieve with a chux cloth (j-cloth in UK)
* pour the yoghurt into the sieve and put over a bowl.
* leave overnight
* use the whey in soup
I think to make cheesecake I wouldn't add the salt (obviously!) and maybe not drain it for so long. I'll give this a go and let you know. Also, I want to experiment with different fruits and perhaps a little bit of WeightWatchers jelly. I'm always rushed in the morning so something that is good to eat and can be consumed a little faster than a bowl of yoghurt and fruit is an advantage. I usually take my smoothie to work with me but sometimes it takes me an hour to eat it!

I've done some experimenting with the thickened yoghurt and WW jelly. The results are looking promising. I'll post a recipe when I'm happy with the final recipe.
Yoghurt and philly sounds like the consistency I'm going for and probably a lot easier than what I'm doing. :)

Yum! Tried the 'cheesecake'... Just biffed all my seeds for the day in lol..and didn't let it set (I made it this morn).. had me yoghurt with it and YES... very nice! And how filling is this!!! Gosh I was hardly hungers at lunch.

You can get small spring sided tins from good kitchen shops or I just use a ramekin dish.

I just push the seeds into shape in a normal dessert bowl, pour the yoghurt in, add the fruit, then eat it.

I stick them in the kitchen whizz which chops them up really well. I don't use tahini in mine.

I made the cheesecake on Thurs night and had it for breakfaast yesterday. I didn't read the recipe again before though and I thought you use all of your seeds. Didn't quite work. I used half of my ground up mix but there probably wasn't enough tahini to make it stick.
I'm a bit perplexed though as how the yoghurt is meant to set. The Vaalia Low Fat Natural yoghurt is rather runny. The Jalna Fat Free Natural yoghurt I was getting before possibly would have been more likely to set though as it is already set pretty much. Because mine didn't set, when I unlatched the mini springform pan it went everywhere! I suspected it may do that so I had it in a bowl.
It was so good though. Might have it as a treat once a week. Though there's nothign about it that is a treat for us! It's just bit more exciting tht mixing seeds, yoghurt and fruit in a bowl!

Just had a revelation regarding yoghurt and this cheesecake!
You have to use a yoghurt that is 'set' rather than Vaalia that is more runny. I went to coles this morning and needed more Vaalia Low Fat Natural yoghurt but they didnt have any :( I got a single 200g tub of 'Paul's Natural Set yoghurt 99.8% fat free'. You need this type for the cheesecake. The Jalna I was getting before is also 'set'.
Instead of sweetening the yoghurt, could you puree your fruit and mix it in to the yoghurt instead of having it on top? Or do half/half maybe? Puree half of it and mix it in to the yoghurt/cream cheese, and have the other half whole on top? I'll try that next time.
