Steamed Chicken Breast with Spicy Cucumber & Peach Salad PLEASE NOTE: These are the ingredients for ONE serving only.
INGREDIENTS
chicken breast (your weight portion)
1 tsp Eatslim Sweet Spice Blend
1/2 tsp Herbamare
Fresh ground Szechuan Pepper (or black pepper)
Olive Oil spray
SALAD INGREDIENTS
Lebanese cucumber (peel, deseeded and chopped)
2 tbsp Eatslim Asian Marinade
2 cloves of Garlic (finely chopped)
1/2 tbsp ginger (peeled and finely chopped)
1 Peach or Nectarine (deseeded and chopped)
1 tbsp Olive Oil
1 long Red Chilli (deseeded and sliced thinly)
Coriander leaves (not too many, optional)
Sea Salt and fresh ground Black Pepper
METHOD
Rub chicken breast with Sweet Spice Blend, Herbamare and Black Pepper. Lightly spray with olive oil and set aside while making salad.
To make salad: Combine all remaining ingredients in a bowl, toss and chill.
Place chicken in a steamer over rapidly simmering water and steam for 6 minutes or until just cooked through. Slice chicken breast into pieces.
Pile spicy cucumber and peach salad onto serving plate and top with chicken. Serve with Asian greens.
COOK'S TIP
To increase servings to include rest of family, simply multiply ingredients by how many servings are required.
