Thai Beef Salad Very easy and quick to make.....if you like garlic and chillies, you'll love this recipe
This recipe is to serve 4
500gm Rump steak
1 cucumber
1 punnet cherry tomatoes
2 handfuls rocket lettuce
some mint leaves (optional)
Dressing
2 cloves Garlic crushed
coriander leaves and the stalk
small chilli diced
tbspn lime juice
tbspn fish sauce
tspn low salt soy sauce
Put these in a bowl and use a bamix to puree the ingredients together.
You can season the steak before you grill, seal both sides to keep jiuces inside. dont overcook the meat, it has to be pink.
Put the meat on a plate for 4 mins to settle and keep the juices within the steak so its tender.
In a bowl put the rocket salad, sliced cucumbers, cut cherry tomatoes and mint, add thinly sliced meat on top of salad, and pour the dressing over the top. Toss and serve immediately :P
I have used snow peas and bean sprouts , you can make it anyway you like.
