Yummy Cottage Cheese/Avocado Breakfast! I love cottage cheese for breakfast (on grilled tomatos etc) although i'm only allowed a little tomato a day so thought i'll have my cottage cheese with berries and seeds OR nuts etc
However when i weighed out my cottage cheese i was sooooooo dissapointed with how little it looked! edam grated amounts to much more!
Anyway I rememberd a gf who loved guacamoli (excuse spelling) but not the fat content, so she mixed cottage cheese with the avocado to bring down the fat content
Sooooooooo here goes
Ingredients:
cottage cheese allowance
50 avocado (pepitas/pumpkin seed substitute)
Piece of soyalin toast (you could use mountain bread)
Sliced tomato
Whatever other vegetable you want to make up your allowance (spring onion/mushrooms go well)
Method:
Blend the cottage cheese with the avocado, a squeeze of lemon juice, dash of tamari and tabasco...
Toast your bread, spread the mixture onto the bread, top with sliced tomatoes, with your remaining vegies,, serve those on the side and top with remaining spread mixture
