Hi Eveyone, A few of you have been asking for my zucchini fritter recipe, so I thought I would post it in here for everyone to see !
Shisk 2 eggs, add allowance of grated zucchini, diced red capsicum and onion. You may also wish to add spinach, mushrooms, sliced tomato etc if you desire.
Mix altogether, add a pinch of salt and pour in to heated pan and turn over once cooked underneath. Very easy !!
Even better cold the next day ! (I make mine in the evenings and just zap it in the microwave for 30sec).
If you want to use a bread allowance, I also make this however instead of cooking it in the pan, I bake it in the oven.
Cut 1 piece mountain bread in half, put each half in to a ramekin dish. Bake Mountain bread until slightly crispy all over. Pour mixture in and bake in the oven until cooked through. This is extremely filling. I even have trouble trying to get thru it - but it is delish !!!

I made yummy fritters today, for eight people.
Eggs, mushrooms, spanish onion, zucchini and tomato inside mountain bread in my muffin tin.... the kids even liked them
None left over so i couldnt follow your advice to sample them cold

Thnaks for the yum idea! I made a zucchini fritter the other night. Did not add any other vege as I had been sick all day and basically had not been able to eat. The fritter absolutely did the trick and filled the hole and stayed with me!

OMG these are delicious! I struggle to find vege's I actually like and made these with zucchini, mushroom and a little red onion. Made mine into little fritters, a bit like pikelets!

WOw I could never remember where I got this recipe from! I have used it right through my journey and still adore it. I have it cold at work more than I ever have it hot.. YUMMMM. On top of cucmber and lettuce with a slice of cold toasted burgen covered in tahini - tis one of my fav work lunches.
